Easiest Keto Egg White Bread|鬆軟生酮蛋白吐司

材料:
3克 即發酵母
1湯匙 菊粉(或0.5湯匙糖/蜂蜜)
160克 清水
60克 蛋清蛋白粉
20克 阿洛酮糖
1茶匙 檸檬汁/蘋果醋
1/3茶匙 雲呢拿香精
鹽少許

買的乾燥蛋白粉做不成功,而在蝦皮買的一個牌子叫”永銓蛋白粉”就做成功了💪🏼

💡必須將蛋白打發至非常非常堅挺的乾性發泡,這有助麵包發起並做出蓬鬆感。舉起打蛋器,檢查蛋白是否尖銳挺直不下垂。

💡乳清蛋白粉、豌豆蛋白粉、小麥蛋白粉等因含有脂肪,將無法打發起來,因此不適用於此食譜

💡不建議用其他生酮甜味劑代替阿洛酮糖,因為阿洛酮糖的作用是令麵包更柔軟。

💡雲呢拿香精的作用是掩蓋蛋白粉中強烈的蛋腥味。

做法:
1. 將酵母、菊粉和30毫升溫水 (40°C以下) 混合。靜置10分鐘發酵,確保酵母有活性。
2. 酵母混合物、加入蛋清蛋白粉、阿洛酮糖、檸檬汁、130毫升水、少許鹽和雲呢拿香精。高速打發直到乾性發泡。
3.將麵糊轉移到麵包盤中,在溫暖的環境中讓它發酵45分鐘,麵糊將發大約兩到三成。同時將烤箱預熱至160°C。
4. 160°C烤30分鐘(中途用鋁箔蓋住麵包,以免頂部過度燒焦)。
5. 關掉烤箱後,將麵包留在裡面一小時,請不要打開烤箱,讓麵包逐漸冷卻和定型。

Ingredients:
3g instant yeast
30g + 130g water
1tbsp inulin powder (or 0.5 tbsp sugar/honey)

20g allulose
1 tsp lemon juice/apple cider vinegar (or 0.5 tsp cream of tartar)
1/3 tsp vanilla extract
Pinch of salt

💡Beat the egg whites to very very stiff peaks as it helps the batter rise better.

💡I do not recommend substituting allulose with other keto sweeteners, as allulose helps a lot in giving the bread a soft texture and a beautiful brown colour.

💡Vanilla extract is used here to cover the strong eggy smell that naturally comes from the protein powder.

Instructions:
1. Mix yeast with inulin powder and 30ml of warm water (below 40°C). Set aside for 10 mins for proofing, make sure the mixture turns foamy.
2. In a large mixing bowl, add yeast mixture, egg white protein powder, allulose, lemon juice, 130ml water, a pinch of salt and vanilla extract (optional). Beat on high speed to very stiff peaks.
3. Transfer the batter to a bread pan and let proof for 45 mins in a warm environment. The batter will rise around 20-30%. Preheat the oven to 160C meanwhile.
4. Bake at 160C for 30 mins (around 15 mins in, cover the bread with aluminium foil to avoid overly browning the top, if necessary).
5. After switching off the oven, leave the bread inside for an hour for gradual cooling and setting. Enjoy!

I've experimented and modified here and there to create my own version of this keto bread that has the shortest possible ingredient list and requires absolutely no skills, and still turned out with a soft and fluffy bread loaf (that’s not dense nor chewy at all). I hope you would like it :)
