Chinese Garlic Eggplant
Ingredients:
⁃ 2 Chinese eggplants, cut lengthwise
⁃ 80 g pork, minced
⁃ 1/4 a green bell pepper
⁃ 1/4 a red bell pepper
⁃ 3 pieces ginger, chopped
⁃ 3 pieces garlic, chopped
⁃ 1 tsp pepper
⁃ 1 piece spring onion

For the sauce:
⁃ 1 tbsp chili bean paste
⁃ 1 tbsp soy sauce
⁃ 1/2 tsp old soy sauce
⁃ 1 cup water
⁃ 3/4 tbsp sugar
⁃ 1/4 water
⁃ 1 tbsp corn starch
- 1 Tbsp vinegar
