my favorite GO TO (low carb) dessert/snack

I feel best on Low Carb foods, and try to eat that way most of the time. Here is one of my favorites... especially since I'm breast feeding and often hungry needing something quick to grab to help curb the hunger!

Keto / Low Carb Custard
12 Egg Yolks
1/3 cup Sweet Mix (or 3 to 4 droppers Stevia)
1/8 Tsp. Salt
1 tsp vanilla
2 cups almond milk
1/2 cup cream
1 1/2 cups water

Heat almond milk, cream, and water until scalding. Beat egg yolks, sweetener, salt and vanilla together. Add 1 cup scalded milk and whisk. Whisk in remaining milk. Pour into ramekins and place in a glass baking pan filled with 1 1/2 inches of water. Bake at 350 degrees F. for 30 minutes or until set. Cool. 8 servings.
