COCONUT CANDY - MALAYSIAN SWEET SNACK - SIMPLE & EASY

Hello Everybody
Today I will show you how to make a very old Coconut Candy which a lot of people might have forgotten how to make it. This recipe idea is from a condensed milk company namely Carnation, who used to paste recipes using Carnation condensed milk in 1960. I used to make it with my sisters and we were using fresh grated coconut but since in Europe it is not possible to buy fresh grated coconut; I will be using desiccated coconut to show you how its done.
It is fun to make this candy with your children. Here are the following ingredients you will need.

*250gm desiccated coconut (about 1 large fresh grated coconut)
100gm sugar
**50-60ml full cream milk
1 can (400ml) sweetened condensed milk
2 tbsp butter
2 tsp vanilla essence
Red food coloring or any color of your choice.

1 square form about 20x20cm.

Firstly grease the form and set aside.

Heat a non stick pan at medium low heat. Melt the butter and then add all the ingredients. Mix and stir all the ingredients together to clear all lumps. Continue heating at medium low heat and keep stirring. Cook till the whole mass becomes like a thick cookie dough, sticky and gluey. This will take about 18-20 minutes depending on your cooker. Keep stirring, the minute you stop stirring the base in the pan will burnt the ingredients.
Scoop the ready cooked ingredients into the form.
Spread it out evenly and give it a light press to form a firm Flat dough/
pastry in the form. Leave it to cool for about 20 minutes.

Then cut the candy paste into little square cubes(3×3cm) But do not remove from the pan/form yet. Leave it in the fridge to firm for at least 4 hours but for better result best overnight.

Remove and serve or store in airtight container and place it in the fridge .Shelf life of the candy in the fridge is about maximum 3 weeks.

* When using fresh coconut. The fresh coconut have to dry fry till it is dry like the desiccated coconut which in actual fact gives a better aroma to the candy.

**If you are using fresh coconut you omit using full cream milk and if you are using desiccated coconut you can also omit the full cream, its ok its not necessary. It only make your end result of the candy dry and firm whereas using the full cream the candy will be soft when freshly made. It will dry out over the days.
