Filipino Ginisang Munggo | Sauteed Mung Beans and Dried Shrimp with Spinach

Ginisang Munggo or Sauteed Mung Bean is a simple Filipino vegetable dish that is usually eaten during Fridays for some reason. Mung beans are soaked in water until soft and then sauteed with dried shrimp. This is best enjoyed with rice.

The ingredients for Ginisang Munggo are as follows:

1 cup mung beans, soaked in 2 cups water for 3 hrs.
4 cloves crushed garlic
1 medium red onion, sliced
1 medium ripe tomato, cubed
1/2 cup dried shrimp
2 to 3 cups beef broth
1 cup fresh spinach
2 tablespoons fish sauce
1/4 teaspoon ground black pepper
3 tablespoons cooking oil
