I made a little Cuban-inspired "kitchen sink" potato salad today... the kind my mom used to make when I was little.

Nothing fancy. Just potatoes, crispy bacon, red onion, boiled egg, and finished simply with vinegar, olive oil, and salt.

The kind of recipe that reminds you that sometimes the best meals are the ones tied to memories, not measurements.
Recipe:

• 4 potatoes, boiled and cut into chunks
• 5 strips crispy bacon, chopped
• 1/4 red onion, thinly sliced
• 3 boiled eggs, chopped
• Olive oil
• Vinegar
• Salt to taste

Toss everything together while the potatoes are still slightly warm, drizzle generously with olive oil and vinegar, season with salt, and mix until everything is coated and flavorful.
