How to Make a Cartouche
The cartouche is a useful thing in any cook's arsenal. Firstly, they are useful for keeping the contents of a saucepan below sea-level when brasing/poaching etc, even if you are putting a lid on. Secondly, they are useful when braising something, when you want more evaporation of the liquid that you would get with a lid on, but a more controlled level of evaporation that you might get with no covering at all.
