Ingredients:
• 1 large baingan (eggplant), thinly sliced
• 1 cup besan (gram flour)
• ½ tsp red chili powder
• ¼ tsp turmeric powder
• ½ tsp coriander powder
• Salt to taste
• Water as needed
• dry fenugreek
• Oil for frying

Instructions:

1. Slice the baingan into thin rounds.
2. In a bowl, mix besan, spices, salt, and water to make a smooth batter.
3. Dip each baingan slice into the batter.
4. Heat oil and fry until golden brown and crispy.
5. Remove onto paper towels and serve hot with chutney or ketchup.
