Ingredients 🥣

3/4 bowl desi ghee (soft, not melted) 🧈
1 bowl powdered sugar (sifted) 🍚
1 bowl maida (all-purpose flour) 🌾
1/2 bowl besan (gram flour) 🌼
1/4 bowl suji (semolina) 🌾
1/2 tsp baking powder 🥄
1/4 tsp baking soda 🧂
1/2 tsp elaichi powder (cardamom powder) 🌿
Almonds & melon seeds (for garnishing) 🌰🍈

Instructions 🍪✨

1. Prepare the Dough:
In a mixing bowl, whisk desi ghee and powdered sugar until smooth and creamy. 🥄💛
Sift together maida, besan, suji, baking powder, and baking soda. Gradually add these dry ingredients to the ghee-sugar mixture. 👩‍🍳
Add elaichi powder and knead into a soft dough.
Cover the dough and let it rest for 10-15 minutes in freeze.

2. Shape the Nankhatai:
Preheat your kadai/OTG/microwave at 180°C for 10 minutes. 🔥
Divide the dough into small portions, roll them into balls, and slightly flatten them.
Garnish each piece with a slice of almond or a sprinkle of melon seeds. 🌰🍈

3. Cooking in a Kadai:
Add a layer of salt/sand at the bottom of a deep kadai and place a stand or steel plate on top. Preheat on medium flame for 10 minutes.
Place the nankhatai on a greased plate or parchment paper, then set it inside the kadai.
Cover with a lid and bake for 15–20 minutes on low flame.

4. Cooking in OTG/Microwave:
Arrange the nankhatai on a greased baking tray, keeping some space between them.
Bake at 180°C for 12–15 minutes or until the edges are golden brown.

Tips:
Let the nankhatai cool completely after baking—they’ll firm up as they cool. 🌬️
Store them in an airtight container to keep them fresh and crumbly. 🏺
