Portion servings: 5-6 pax
Preparation time: 3-4 hrs
Cooking time: 50-60 mins

Ingredients:

For powdered masala:
Coriander seeds 1 tbsp
Bayleaf 2 pcs
Cloves 5-6 pcs
Green cardamom 4 pcs
Cinnamon 1 inch
Ajwain ¼ tsp

For masala paste:
Mint leaves ½ cup
Coriander leaves ½ cup
Green chilli 3 pcs
Garlic 8-9 cloves
Ginger ½ inch
Water as required
Red chilli paste 1 tbsp
Jeera powder ½ tsp
Coriander powder ½ tsp
Salt ½ tsp
Sugar 1 tsp
Amchur powder ½ tsp

For cooking vegetables:
Potato 2 pcs
Pumpkin dices 200 gms
Brown chana soaked 1 cup
Water as required
Salt ½ tsp

For making sabji:
Mustard oil ¼ cup
Dry red chillies 2 pcs
Panch Phoran ½ tbsp
Kasoori methi 1 tbsp
Powdered masala 2 tbsp
Wet masala
Turmeric powder 1 tsp
Red chilli powder ½ tbsp
Boiled potato-pumpkin-chana
Water as required
Coriander chopped 1 tbsp

For kachori :
Urad dal soaked 1 cup
Garlic 4-5 cloves
Black pepper 6-7 pcs
Green chilli 2 pc
Hing ½ tsp
Salt ½ tsp
Water as required
Refined flour 1½ cup
Suji ½ cup
Salt ½ tsp

For plating:
Coriander chopped
Namkeen sev

Method:

Step 1: Prepare Masala Powder
Dry roast coriander seeds, bay leaf, cloves, cardamom, cinnamon, and ajwain.
Cool and grind into a fine powder. Keep aside.

Step 2: Make the Green Masala Paste
Grind mint, coriander leaves, green chillies, garlic, and ginger into a smooth paste with a little water.
Transfer it to a bowl and mix in red chilli paste, jeera powder, coriander powder, salt, sugar, and amchur powder. Set aside.

Step 3: Pressure Cook Veggies
Pressure cook chopped potatoes, pumpkin, and soaked chana with salt and water for 3–4 whistles.
Drain and keep aside.

Step 4: Prepare the Curry
Heat mustard oil until it smokes lightly.
Add dry red chillies and panch phoran. Let them splutter.
Add the prepared masala paste and sauté until oil separates.
Add kasoori methi, powdered masala, turmeric, and chilli powder. Mix well.

Step 5: Add Cooked Veggies
Add the boiled veggies to the masala.
Mix them and add water as needed. Simmer for 5–7 minutes.
Finish with chopped coriander.

Step 6: Make Urad Dal Paste for Kachori Dough
Grind soaked urad dal with garlic, green chillies, black pepper, hing, salt, and water into a coarse paste.

Step 7: Prepare the Dough
Mix refined flour, suji, and salt.
Add the dal paste into this mixture and knead into a soft dough. Rest for 30 minutes.

Step 8: Shape & Fry Kachoris
Divide dough into small balls, flatten and roll into thick discs.
Fry in hot oil on medium flame until golden brown and puffed.

Step 9: Serve
Place hot kachoris on a plate. Pour the spicy potato-pumpkin-chana curry on the side. Garnish with fresh coriander & namkeen sev .
