Cucumber Ginger Anti-Inflammatory Drink 🥒🫚🍋

An anti-inflammatory, hydrating, super healthy, very low-carb drink. Perfect if you’re watching your sugar intake and want to detoxify your digestive system. This refreshing drink is incredibly healthy, won’t cause glucose spikes, keeps you refreshed with regulated energy, and makes your stomach feel great.

Ingredients:
5 small cucumbers
Juice of 2 lemons
A few small pieces of lemon, rind removed
1 1/2 inch ginger root, with skin on
Handful of fresh mint leaves
½ tsp stevia extract (or Splenda, adjust to taste)
34 oz water
2 cups of ice

For Serving: Sliced cucumber, sliced lemon, fresh mint leaves

Instructions:
1. Prep: Chop the cucumbers. Juice the 2 lemons. Prepare a few small pieces of lemon flesh, removing the rind. Wash the ginger root (leave skin on). Wash the mint leaves.

2. Blend: Place the chopped cucumbers, the piece of ginger (with skin), the fresh lemon juice, the small pieces of lemon (without rind), the handful of mint leaves, the stevia extract, and the 34 oz water into a blender.

3. Liquify: Blend until the mixture is completely smooth and has a bright, fresh green color.

4. Strain: Pour the blended mixture through a fine-mesh sieve or colander into a pitcher or bowl. Press gently to extract all the liquid. Discard the pulp left in the strainer.

5. Prepare Serving Pitcher: Cut some thin slices of cucumber and lemon for serving. Add these slices, some fresh mint leaves, and the 2 cups of ice to a serving pitcher.

6. Combine: Pour the strained green juice into the pitcher over the ice, cucumber slices, lemon slices, and mint. Stir well

7. Serve: Serve immediately. Enjoy this super refreshing and healthy drink!
