We’re back in the kitchen of Ping Coombes – MasterChef winner, author and cookery teacher – as she shares her recipe for coconut dhal with flaky roti canai, which is traditionally eaten for breakfast in her home country of Malaysia.
Both of these recipes use mostly store cupboard ingredients and the dhal is really easy and quick to make - great for a weeknight dinner or lunch. Roti canai is a crispy, flaky flatbread enriched with condensed milk. The basic dough is a great accompaniment to dhals and curries but it can also be served with sweet fillings like chocolate spread.

For the dhal
200g red split lentils, rinsed
½ tsp ground turmeric
½ tsp chilli powder
400g can coconut milk
30g butter
2 tbsp vegetable oil
125g mixed baby tomatoes, halved
1 small onion, chopped
2 sprigs fresh curry leaves, or a few dried leaves
1 tsp cumin seeds
For the roti canai
50ml condensed milk
1 medium egg
1 tbsp vegetable oil, plus extra for covering
300g strong white bread flour
