Low Fat Vegan No Oil, No Nuts, No Milk, Mac and Cheese

FYI I could eat this entire meal on my own it is so creamy good. SERIOUSLY, I have to pace myself when eating it because I WANT left overs. This is one of the few meals that my kids always have seconds. They love it! Happy Herbivore cookbook uses either pumpkin pure which I have done, or butternut squash which I have also done. My kids love it with the sweet potatoes best. So definitely try it the other ways too.

Ingredient list:
3 sweet potatoes
3 regular yellow potatoes (any potato works I have used red potatoes in the past too and it is just as good.)
2 cups saved water from boiling potatoes
2 pkg of pasta of your liking
2/3 C Nutritional yeast
1T garlic powder
1T onion powder
1/2 t vegetable seasoning
1 t miso
bread crumbs
nutritional yeast for sprinkling
