How to make cod croquettes/croquetas de bacalao, Spanish croquettes, Spanish tapas, spanish recipes

Croquetas or croquettes have always been a favourite at any restaurant, either Spanish or British and now you can have them right at home.
They are quick to make and you can make an awful lot of them and freeze them to then use whenever you don't feel like cooking or want to have something quick without so much preparation. Just heat some oil in a deep frying pan and a few minutes later you will have delicious cod croquettes.
Croquettes are very versatile and you can make them of virtually anything. I'm going to make them with spinach and cheese next and see what comes out. Experimenting with flavours and textures is part of our adventure of cooking. No dishes would be created by just doing the same thing over and over again (although some of them are incredible just the way they are :0)
