Hey loves! For today's recipe, I made an easy no-bake cheesecake with my favorite summer fruit; mango! Mango cheesecake is one of those refreshing desserts that I crave during summer since it's also the time when mangoes are the sweetest ♥ I love how this turned and I really do hope y'all give it a try! How to Make Mango Cheesecake No Bake
Ring Mold: 15.24 cm (6 inch)
INGREDIENTS

~Mango Puree~
270 g (7 oz) MANGO, ripe
*If you don't have a kitchen scale, I used 2 mangoes (without seed)
50 g (1/4 cup) SUGAR
5 ml (1 tsp) WATER
*Run the puree through a sieve to strain out the fibers
*Set aside 100 g or about 1/2 cup for the mango mousse. Use the remaining to drizzle on top of the mango cheesecake
~Graham Crust~
120 g (1 cup) GRAHAM CRACKERS, crushed
4 g (1 tsp) SUGAR
50 g (1/4 cup) UNSALTED BUTTER, melted
~Mango Cheesecake~
227 g (8 oz) CREAM CHEESE
118 ml (1/2 cup) CONDENSED MILK

5 ml (1 tsp) VANILLA EXTRACT
9 g (3 tsp) GELATIN
37 ml (2 1/2 tbsp) WATER, cold
118 ml (1/2 cup) WHIPPING CREAM, cold
MANGO PUREE
*Refrigerate for at least 20 minutes
~Mango Mousse~
100 g (1/2 cup) MANGO PUREE
52 ml (3 1/2 tbsp) WHIPPING CREAM
3 g (1 tsp) GELATIN
15 ml (1 tbsp) WATER, cold
*Refrigerate for 6 to 8 hours
~Toppings~ *optional
