Norton India Oil Stone - Coarse / Fine IB8 - part 2

I am using my Norton India oil stone to sharpen a chinese vegetable cleaver type of kitchen knife branded by IKEA and made in China.

The steel type is 3Cr13 - low carbon content and low Rockwell hardness.

Easy to grind buy with low edge retention.

The edge can be easily polished but the edge retention will be really low.

For such type of steel a coarser edge is more suitable, more long lasting.

The India stone by Norton is just the right tool for sharpening such knives.

It works fast, it works well and the fine side gives sharp enough edge for most of your kitchen tasks.

I am using fine machine oil.

You will see that additional grinding of the first centimeters of the edge was needed - I could edited that part but for me is important that you can see that even routine sharpening can suffer from distracted person behind the knife.
I did miss the right angle and a few more strokes were necessary to form the edge.

Plateau method was used and the final 6 stroked on the fine side were for creating a micro bevel.

Please excuse the additional background noise - my cat and my girlfriend do not like when I sharpen knives in 8 am in the sunday morning.
