Sweet and savoury brunch idea

Gula melaka granola with coconut flakes and pecans (10 servings):

250g rolled oats
100g pecans
50g coconut flakes
100g gula melaka (grated/ finely chopped)
60g olive oil
1/4 tsp salt

In a large mixing bowl, combine oats, pecans and salt.
In a pot, melt gula melaka with oil and some water (~10 to 20ml) until just dissolved.
Use low heat.

Pour gula melaka over oat mixture. Coat well.
Spread mixture onto baking paper.
Air fry at 160 deg C for 20 mins.
Add coconut flakes.
Air fry for another 5 mins until coconut flakes are golden brown.
Let it cool for an hour or so.

Brown Butter Sage Cream Recipe (3-4 servings):

60g unsalted butter
8-10 sage leaves
250ml whipping cream
Pinch of salt

In a pot, melt butter until it browns. Stir regularly. Add sage leaves when it starts foaming with a nutty aroma. Turn off heat.
Let it cool. Then pour cream over, stir to combine.

Let it steep for 15- 30 mins then chill in the fridge until cold.
Whip until medium peak once cold.
Spread over toast or put into a piping bag to pipe on toast.
