Tempeh Curry
1 medium red bell pepper
2 medium zucchini
1 head cauliflower
3 medium carrots
1-2 onions (depending on size, i used 2 medium )
5-6 cloves garlic
1 thumb size piece of ginger
1 can of coconut milk (i made my own using 2.5 cups coconut flakes blended with 3 cups of water on high for 2 minutes, then strain through a nut milk bag)
1 jar tomato paste
3 TBSP curry powder (use less if you dont like spice)
1/3 cup coconut aminos
salt and pepper
2 blocks of tempeh
chop all veggies, dice onions, garlic, ginger, and add to a pot with the spices, tomato paste, and 4 cups of water. Place lid on the pot and cook for about 20 minutes until the vegetables are cooked. After 20 minutes, chop tempeh into bite size pieces and add to pot along with the coconut aminos. Cook for 5 more minutes. Remove from heat, and add the coconut milk, juice of a lime, and taste to see if it needs more salt. Serve with brown rice noodles, or brown rice. top with cilantro.
