Maqluba (Makloubeh) with chicken(Arabic rice )
How to make chicken maqluba | Palestinian Maqluba recipe

Maqluba

For the chicken

2 kg  Chicken medium size
2 Onions sliced
2 tbsp sliced garlic
1 teaspoon pepper crushed
1 teaspoon allspice
1/2 teaspoon cinnamon
1 turmeric powder
1 tbsp cumin powder
1.5 coriander powder
2 chicken Maggie cube or 2 cup chicken broth
2 dry lemon
3 bay leaf
8 whole spice
5 cloves
1/2 tsp Cardamom
3 cinnamon sticks
2.5 tbsp ghee
Salt to taste
6 cups boiling water

For rice
2 cups soaked long grain rice
1/2 teaspoon cinnamon
1/2 teaspoon allspice
1 tbsp chaat Masala
1/2 turmeric powder
1/2 black pepper crushed
Salt to taste

Deep fry or oven bake
1 Potato thickly sliced
2 Aubergine thickly sliced
2 bell pepper cut as per desired
1 carrot thickly sliced
1 cauliflower cut as per desired

Garnish
Coriander
Mint
Toasted or fried Sliced almond
Sliced lemon
Add ghee in a heavy bottom pan. Add dry lemon, bay leaf, whole spice, cloves, Cardamom, cinnamon sticks and sliced garlic, salt & onions. Sauté for 2-3 minutes. Add chicken and sauté over high heat for 4-5 minutes. Add spices and sauté for another minute. Add boiling water, cover and bring to boil over high heat. Reduce heat and cook for 30 minutes.
Meanwhile deep fry or oven bake cauliflower, carrots, bell pepper, Aubergine and potatoes.
Allow the rice to soak in water about 30 minutes.  After the allotted time rinse the rice and place into a bowl.   Add 1/2 teaspoon cinnamon, 1/2 teaspoon allspice, 1 tbsp chaat Masala , 1/2 turmeric powder, 1/2 black pepper crushed, Salt to taste .  Mix and set aside.

Layering begins by removing the chicken pieces from the broth and place them side down in a dutch oven.  Now start layering deep fried vegetables rice & chicken, layering them all and finally topping it off with the seasoned rice.  Strain 4 cups of the chicken broth and pour over the plate to fill the dutch oven without disturbing the rice.

Lid on and cook over medium heat for 35-45 minute.
To serve, remove the Maqluba from the burner and let sit for 20 minutes to set the contents inside. Then uncover the pot and invert onto a platter.  Lift the pot carefully off . Garnish with Coriander, Mint, Toasted or fried Sliced almond & Sliced lemon !
