Korean Cooking Class for Kids-Gimbap/Marina View School

How to make Gimbap:
A seaweed rice roll made of gim (a sheet of dried seaweed) and bap (rice).

Ingredients:

o 6 cups cooked white short grain rice
o 1 Tbsp salt
o 2 Tbsp sesame oil
o 4 sheets toasted laver (seaweed sheet)
o 4 pickled radishes (3 oz, 90g), sliced
o 2/3 English cucumber (3 1/2 oz, 100g)
o 1/2 carrot
o 3 eggs
o Vegetable oil, salt, sesame oil as needed

Method- Get everything ready!

1. In a medium bowl, combine the ingredients for the Cucumber Brine and soak the cucumber while you are getting everything else ready.

Cucumber Brine:

o 2/3 Tbsp white vinegar
o 2/3 Tbsp sugar
o 2/3 Tbsp water
o pinch of salt

2. Cut the carrot into fine julienne strips (like toothpicks). In a fry pan, heat vegetable oil over medium - high heat and cook for a few minutes. Season with salt. Let them cool.

3. In a small bowl, beat the eggs with a pinch of salt. In a fry pan, pour the eggs into the pan and cook one thick sheet. Remove from heat onto a plate and cut into long slices - the same size as the cucumber.

4. Take cucumber out and pat dry with a paper towel. Cut the cucumber to the same length as the laver(seaweed), and then remove seeds. Cut into strips as thick as pencils.

5. Slice radishes into long strips.

Putting it all together:

1. Place a sheet of seaweed shiny-side down on a bamboo mat.

2. With your fingers, put 1 cup of seasoned rice in the centre of the sheet. Spread the rice evenly over the bottom 3/4 of the sheet gently.

NOTE: Make sure not to have an overly thick layer of rice or the Gimbap will not roll properly.
3. Arrange a slice of pickled radish, cucumber, carrot and egg at the centre of the rice. Make sure to line them across the sheet.

4. Roll the bamboo mat forward towards the non-rice covered end. While you roll, press firmly to shape the roll, while still remaining gentle enough as to not damage the laver.

Grease the knife with sesame oil, then cut the rolls into 1/2 inch (1 cm) thick pieces.
