Review: Organic Cooking Class at Huerta Los Tamarindos in Cabo

Huerta Los Tamarindos Cabo (http://huertalostamarindos.com/) is located just a few minutes from downtown San Jose Del Cabo, but it feels like a whole other world.
The 17-acre property dates back to the 19th century, when it became one of the region's biggest sugar cane producers. Restauranteur Enrique Silva purchased the property in 2003 and turned it into an organic farm.
A few years ago he transformed the historic ranch house into a fine dining establishment that has since become a popular venue for weddings and other events. Today, the farm provides fresh herbs and vegetables to many of the top restaurants and hotels in Los Cabos.
Enrique started our day by giving us a personal tour of the Huerta Los Tamarindos Cabo farm, where they grow everything from peppers to carrots, from cilantro to eggplants.
Being city kids, our girls are used to seeing herbs and vegetables in the supermarket. Having the opportunity to get up close and see exactly how food is grown from the soil was a great learning experience for them. And meeting the cows from the neighboring farm was fun too.
Then it was time to get cooking.
The organic cooking classes are conducted in this gorgeous outdoor kitchen.
Chef Gabriel Castillo led the class by having us chop garlic, rosemary, sage, and basil to make a delicious herb oil that we would use in just about every course of our meal.
We made eggplant rolls stuffed with ricotta cheese and topped with a delicious pomodoro sauce, chicken with green mole, red seasoned rice, and a dessert I've never tried before: zucchini blossoms stuffed with ricotta cheese and topped with guava jam.
As a special treat for our girls, Chef Gabriel also showed us how to make two different kinds of pizza: one with a regular crust, and one with a crust made of hoja santa leaves.
When the class ended, we were seated in the Huerta Los Tamarindos Cabo restaurant where they served us each of the 4 courses we cooked. They were absolutely delicious. And the margaritas were fantastic too!

Insider Tip 1:
Wear closed-toe shoes
The grounds at the Huerta Los Tamarindos Cabo farm can get quite muddy, so you'll be most comfortable if you wear closed-toe shoes. Our girls were in flip-flops that day and got very messy. If I had to do it again, I'd put them in sneakers or crocs.
Insider Tip 2:
Don't worry about getting back
Huerta Los Tamarindos Cabo feels like it's in the middle of nowhere, and you might be nervous about how you're going to get back to your hotel. But don't sweat it. The team here knows to call you a cab as dessert is served, so that the taxi will arrive by the time you've finished your meal.
