FATTET HUMMUS
1 cup dried chickpeas, soaked overnight with 1 tsp baking soda, then drained. Or you can use 1 16 ounce can of chickpeas, drained
2 8 inch pitas, cut into 1 inch pieces
Extra virgin olive oil
2 cloves of minced garlic
2-3 cloves whole garlic
1 tsp cumin
1/4 cup pine nuts
1 cup plain greek yogurt (full fat is best)
Salt and pepper to taste
3 tbsp. Finely chopped fresh or 1 tsp dried mint
1⁄4 tsp. Paprika
Finely chopped fresh mint and or parsley for garnish

If using dried chickpeas, boil them in water in an 8-qt. saucepan until very tender, about 30 minutes. Drain and transfer to a shallow dish. If using canned chickpeas you can skip this step and put the chickpeas in a 9 by 9 inch dish. Heat the oven to 400°. Toss the pita pieces with a drizzle of olive oil, salt, and pepper on a baking sheet; spread into an even layer. Bake until golden and crisp, about 8–10 minutes; then let cool slightly. Heat the chickpeas in water and add 1 tsp of cumin and 2-3 garlic cloves for 30 minutes. Salt to taste. Drain the chickpeas, and reserve the liquid. Toss the chickpeas with the pita chips in a casserole dish, drizzle with a little of the water from the boiled beans. Heat the remaining oil (about 1 tbsp) in a small skillet over medium-high heat. Toast the pine nuts until golden, 4–5 minutes; set aside. In another bowl, stir yogurt, mint, paprika, garlic, salt, and pepper. To assemble, add dollops of hummus to the chickpeas and croutons, then top with the yogurt. Sprinkle with fresh mint and parsley, then the pine nuts, and drizzle with more olive oil if desired.
