Canning, Cooking and Harvesting | A Day at the Cabin
We bring you along for a day of activities around the cabin.
Now that summer is here our beehives are rapidly multiplying and the garden is beginning to take off under the midnight sun. The season is brief so we attempt to take advantage of every day by harvesting and preserving food for the winter months.
Rose Petal Jelly Recipe:
(Yields 5 half pints)
- 4 cups fresh rose petals
- 4 cups water
- 2 cups sugar
- 1 lemon
- 1 box of low-sugar pectin
1. Steep rose petals for 20 minutes.
2. Strain liquid and return to heat.
3. Add sugar and lemon juice, bring to a boil.
4. Add pectin, return to a rapid boil for 2 minutes or until mixture begins to thicken.
5. Water bath half pints for 15 minutes.
Spruce Tip Syrup Recipe:
(Yields 9 half pints)
- 7 cups spruce tips
- 7 cups water
- 7 cups sugar
- 2 tablespoons molasses
1. Steep spruce tips for 30 minutes.
2. Strain liquid and return to heat, add sugar and molasses.
3. Simmer until mixture has reduced to desired consistency, 1 hour approximately for thin syrup.
4. Water bath half pints for 15 minutes.
