Smoked Pasture Raised Chicken Wings!

Foil Drip Pan
Ingredients:
2 - Packs of Gunthorp Farms Chicken Wings
1 – cup of wood chips of your choice (Pecan or Apple suggested)
Rub / Marinade:
1/2 - tsp of Kosher Salt
1 - tsp of Bourbon Barrel Foods Smoked Pepper
1/2 - tsp of Bourbon Barrel Foods Smoked Paprika
1 - tsp of Organic Garlic - Diced
2 - tbs of Organic Soy Sauce - Low Sodium
1 - tbs of Organic Raw Honey
2 - 4 tbs of Organic Olive Oil
Pre-heat the smoker to 225 degrees (250 degrees for oven) and add the wood chips 30 minutes before
adding the wings (If you don't have a smoker, you can add 1/2 tsp of liquid smoke to the rub / marinade for smoke flavor
Preparation:
Step 1 – Cut the wing tip off, and then separate the drum and wing by cutting apart at the joint
Step 2 – Place cut up wings in a bowl and add seasonings for the rub / marinade and toss wings
Step 3 – Put wings into a plastic bag and seal. Let wings marinate for 1 - 2 hours, or as long as overnight
Step 4 – Dump the wings onto an oven safe tray
Step 5 - Place wings into the smoker or oven and cook for 1.5 - 2 hours until they have reached the doneness of your liking.
Internal temperature should be at least 160 degrees.
Place cooked wings onto a platter or plate, and serve with your favorite dipping sauce!
Pit Master's Tip: We used pecan wood chips for this recipe, but you can also use apple. I do not recommend using oak, mesquite, or hickory as they would all be too strong of a flavor for the wings. To add another layer of flavor, wings can be dipped into your favorite BBQ sauce and put on the grill for a few minutes per side, just enough time to set the sauce on the wings.
