Crispy OKOY NA KALABASA || SQUASH FRITTERS ~ Vegetable Okoy / Ukoy Recipe | VEGAN EGGLESS FRITTERS
Okoy or Ukoy is one of my favourite Filipino comfort food.
Good for snacking, appetizer and even as mains..( to eat with rice).
You can use almost any vegetables to make fritters, that is what made me like this dish a lot..I can combine whatever is available in my fridge and always end up creating a nice and tasty meal.
Full Ingredients and How to Cook:
1 cup flour
½ cup cornstarch
1 shallot, chopped
4 cloves garlic, chopped
1 scallion, sliced
1 carrot, grated
buttercup squash, grated (I only use half in this recipe)
1 tsp each: salt, pepper & garlic powder
1 cup of water
How To cook:
1. In a large bowl, mix flour, cornstarch, salt, pepper and garlic powder. Mix well until thoroughly combined.
2. Add water and mix again, then add shallot, garlic and scallions.
3. Add the grated carrots and grated squash, mix well.
4. Form a thin patty in a small plate (I use this method when cooking fritters, it's easier to transfer the mixture into the wok)
4. Heat the wok and add vegetable oil. Deep fry in small batches. It normally takes 2-3 minutes each side. Remove from oil when it is golden brown. Transfer on a plate lined with a paper towel.
5. Serve hot with soy-vinegar dipping sauce.
**TIPS: All my fritters recipe is EGGLESS. This is how my fritters stay crispy for long. It tends to get saggy and soft when you add the egg. When reheating the fritters, use a CONVENTIONAL oven set at 350° F for ten minutes. Never use a microwave oven.
You can store your fritters in the fridge in an airtight container, for 4-5 days.
