Day 22 of 30 Days of Greens

Loaded with roasted broccoli, juicy roasted tomatoes, briny olives, zesty red onions, creamy homemade hummus, and protein-packed chickpeas, all served on a bed of fresh kale. Here’s what’s in the bowl:

Kale
Roasted broccoli
Roasted tomatoes
Olives
Red onions
Homemade hummus
Chickpeas

Basil and Parsley Vinaigrette:
½ cup extra virgin olive oil
1 cup fresh basil leaves
1 cup fresh cilantro leaves
2 tbsp red wine vinegar
1 tbsp dijon mustard
Salt and pepper to taste

Homemade Hummus:
1 can chickpeas, drained
2 tbsp tahini
2 tbsp olive oil
2 tbsp lemon juice
1 clove garlic
Salt and pepper to taste

1. Blend all ingredients in a food processor until smooth
2. Adjust seasoning as needed
