THE BEST CALIFORNIA BURRITO with CARNE ASADA and FRIES MADE ON THE BLACKSTONE GRIDDLE! EASY RECIPE

Today we're making the BEST CALIFORNIA BURRITOS with CARNE ASADA and FRIES on the BLACKSTONE GRIDDLE! This EASY RECIPE is amazing, and the fries made in the AIR FRYER COMBO takes this CALIFORNIA BURRITO with CARNE ASADA to the next level!

Ingredients for our California Burritos

1 1/2 lbs. Flank Steak Marinated (see below for marinade!)
2 large potatoes cut into fries (see below instructions for air fryer fries)
Avocado Cream (see below for amazing Avocado Cream recipe!)
Large Burrito Tortillas
Pico de Gallo
Shredded Cheese
Vegetable oil

Recipe for Carne Asada Marinade (from Carlsbad Cravings!

MARINADE
2 tablespoons olive oil
1/4 cup low sodium soy sauce
1/4 cup orange juice
2 tablespoons lime juice
1 tablespoon brown sugar
1 teaspoon liquid smoke
SPICE MIX
1 tablespoon ground cumin
1 tablespoon garlic powder
2 teaspoons smoked paprika
1 tsp EACH salt, chili powder, onion powder
½ tsp EACH pepper, cayenne pepper

*Add 3 tbs of the spice mix to the marinade (the rest can be used as a dry rub during cooking)

Place marinade in a ziploc baggie or in a container that will hold the meat and the marinade (closely so all parts of the meat are submerged, or close to it!) and set in refrigerator for a minimum of 4 hours (ours sat for 24 hours).

AVOCADO CREMA
2 large avocados
1 cup sour cream
1/4 cup mayonnaise
2 tablespoons lime juice
1/2 teaspoon salt
1/2 teaspoon cumin
1/2 teaspoon garlic powder

Cooking Directions

*For this cook, we used the air fryer to cook the fries. Prepped 2 potatoes, and cut into fries (thickness to your liking). Boiled in hot water for 2 minutes, and dried on a paper towel. Tossed with 1 tbs. vegetable oil. Cooked in the air fryer at 400 degrees. Total cook time was 20 minutes (After 10 minutes, we checked, and tossed, then checked every 5 minutes thereafter and shook/tossed the basket of fries to ensure they did not stick.) Pull from the air fryer and lightly salt.

On the griddle, one burner set to high heat, and another section to med/low. Once the griddle is up to temp, lay 1-2 tbs. of vegetable oil. Place the marinated meat on the high section for 2 minutes per side. Lay additional 1-2 tbs oil on the med/low section of the griddle and pull over the steak and cook on each side for 7 minutes. After 14 minutes, check the internal temp. Continue to flip for 5 minutes per side until the steak is to preference (total cook time for us was 18 minutes for medium rare). Pull the meat and let rest in foil for 20 minutes. Cut meat into thin slices.

Warm tortillas on griddle. Once warm, build the burrito by placing a layer of the avocado cream, followed by the carne asada. One the carne asada, layer pico de gallo and french fries, and top with cheese (*You can use any toppings/fillings you wish for your burrito!). Fold the burrito on both sides, and tuck around the filling, and fold over tightly. Serve and enjoy!
