People ask me all the time whether having half a decade of experience is important when opening up a restaurant. Or if 2 years is enough. Or if no experience is ok.

The thing is...having experience is great. But even a decade worth of restaurant experience will not fully prepare you for what it is like to start a restaurant business. No experience is ever enough. There are just SO many things that may happen that it is impossible to see it all. Even myself with 10 years of being in business I am still learning something each day.

And when I started my ice cream shop 4 years ago, Brian and I had no experience in managing a restaurant or an ice cream shop. We knew that we were open minded, willing to learn, and nimble. Having experience may have helped us dodge SOME mistakes and may have saved us resources. But I know for a fact that unless I had owned a restaurant before or was part of a restaurant's management team, I would have made the same mistakes and blunders.

So 5 years of being a chef or 5 years working front of house would not have helped me dodge ALL the mistakes I made.
