Tomato Basil Soup (made with San Marzano brand tomatoes)

In this video I show you how to make tomato basil soup.

Tomatoes are the major source of the antioxidant lycopene, which has been linked to many health benefits, including reduced risk of heart disease and cancer. They are also a great source of vitamin C, potassium (blood pressure control and heart disease prevention [1]), Vitamin K (important for blood clotting [2] and bone health [3]), and folate (important for tissue growth and cell function)

Serves 4
INGREDIENTS
2 TBSP extra virgin olive oil
6 baby carrots (or2 medium sized carrots diced)cut into large chunks*
2 stalks celery cut into large chunks*
1 onion quartered*
4-6 cloves fresh garlic, diced
(2) 28 oz cans of San Marzano peeled plum tomatoes with juice
6 cups broth or water
2 TBSP fresh basil, chopped, or 2 tsp dried basil
1/2 teaspoon salt
1/4 tsp freshly ground pepper
*I put all of these veggies in my food processor and pulse them until diced. If you don't have a food chopper, then you must dice them by hand.

METHOD
Put carrots, celery and onion in food chopper and pulse about 7 times or until vegetables are diced. Be sure to pulse instead of turning it on, since this will turn the onions into water. We don't want that.
Heat oil over medium heat until it shines.
Add garlic and stir until fragrant (about 30 seconds).
Add carrot/celery/onion mixture and sauté over medium low heat until soft, about 10 minutes.
Add tomatoes with juice, and mash to release more juice.
Add broth, increase heat to medium high, cover pot and bring to rolling boil.
When boiling, turn heat to low, put cover half on/half off and simmer for 20 minutes, stirring occasionally.
After 20 minutes, turn heat off and allow soup to cool slightly.
Carefully transfer hot soup to your blender and blend for 60 seconds or until smooth. If you don't have a blender, you can use an immersion blender or or use a masher if you prefer your soup chunky.
Blend until smooth or until your preferred consistency.
Transfer soup back into original pot and stir in fresh basil, salt and pepper
Serve hot, sprinkled with more basil and good quality grated cheese.
