鹽焗海蝦 Baked Shrimp With Salt #賀年菜 #ChineseLunarNewYear (有字幕 With Subtitles)

今天準備了一個非常簡單的菜“鹽焗蝦”, 這是8隻大蝦, 粗鹽1包半 共600克, 八角10克, 花椒5克, 如果您沒有這些香料, 只有鹽也可以。蝦洗淨, 剪掉尖刺, 吸乾水, 此菜應使用鋼鍋廚具, 不要使用易潔鍋, 粗鹽會劃花塗層, 熱鑊下鹽 八角 花椒, 用中火炒鹽, 炒到微黃時 裝起一半鹽, 將蝦放到鹽上, 把之前裝起的鹽放回蓋住蝦, 冚蓋, 焗5分鐘左右, 如果覺得火太大, 或者有些燶味就轉小火。焗了5分鐘, 焗蝦的時間視乎它的大小, 一般焗3至5分鐘, 見到它轉了色是熟的, 如果開蓋見到未轉色, 您可能要焗多些少時間。
Today a very simple dish "Baked Shrimp With Salt" is prepared, here are 8 big shrimps, coarse salt 1 & 1/2 bags totally 600g, anise 10g, prickly ash 5g, if you don't have these spices only salt is also fine, wash the shrimps, clip the rostrum, drain by kitchen towel. steel pan kitchenware should be used for this dish, don't use non-stick pan, coarse salt will scratches the coating. pour into the salt when the wok is hot, anise and prickly ash, fry the salt on middle heat, scoop up about half of the salt when light brown colour appears, place in the shrimps onto the salt, cover the shrimps with the salt scooped up before, put the lid on, bake about 5 mins, if scorch smell is sniffed, turn into lower heat. 5 mins has passed, the time to bake the shrimps depends on the size of them, normally 3 to 5 mins, colour change means cooking done, if colour change is not seen longer baking time is required.
