SEA CUCUMBER WITH CHINESE MUSHROOMS

2 to 3 small dried sea cucumbers
6 medium Chinese mushrooms sliced
6 to 8 small dried scallops
2 chicken breasts sliced
1 tablespoon sliced ginger
2 cups pork broth (or chicken broth)
1 tablespoon light soy sauce
1 tablespoon Chinese oyster sauce
1 tablespoon sesame oil

Soak the sea cucumbers in a jar with cold water. Change water everyday and continue soaking for 7 days. Put sea cucumbers into boiling water for 15 minutes. Rinse sea cucumber in cold water before cooking.

Cooking Instructions:

In a cooking pot, put 2 cups pork or chicken stock. You can also use water if there is no pork or chicken stock. Add sliced mushrooms, ginger and dride scallops into the pot. Add light soy sauce, Chinese oyster sauce and sesame oil. Cover and simmer at medium heat for 30 minutes. Then add sliced chicken and sea cucumbers into the pot. Cover and simmer for final 15 to 20 minutes. Depending on the sea cucumber, you may need to simmer longer if the sea cucumber is not tender yet. Thicken sauce with cornstarch solution to desired thickness. Enjoy!
