Easy Slow Cooker BBQ Shredded Beef

The beef cooks until it's falling apart, shredded, then tossed in the most AMAZING BBQ sauce that’s savoury, sweet, sticky and loaded with flavour you will NEVER buy in a bottle thanks to hours of slow cooking!!

Pile onto sliders with slaw, make big Southern dinner plates, stuff into baked potatoes, make hot wraps, grab a fork and eat it straight out of the bowl!! Enjoy! - N x ❤️

Easy Slow Cooker BBQ Shredded Beef
Serves 8 - 10
 
1.5 kg / 3 lb chuck beef, cut into 4 thick steaks
1 cup beer (anything other than dark stouts like Guinness), or beef stock/broth, low sodium*
3 tbsp olive oil or other neutral oil, for searing
RUB – mix in bowl:
3 tbsp brown sugar
1 tbsp each paprika, garlic powder
2 tsp each onion, mustard powder
1 tsp each cumin, black pepper
2 tsp cooking salt / kosher salt (halve for table salt)
BBQ SAUCE – whisk in slow cooker:
1 cup apple cider vinegar
3 cups (775g) tomato ketchup (or Aussie tomato sauce)
3 tbsp (85g) molasses, original/regular (not blackstrap, too dark)
2/3 cup brown sugar (140g)
4 tsp mustard powder
3 tsp garlic powder
4 tsp Worcestershire sauce
2 tsp cooking salt / kosher salt (halve for table salt)
2 tsp black pepper
2 tsp Tabasco or cayenne pepper (optional, for touch of spiciness)
 
1. Coat beef in rub, shake off excess. Heat half oil on medium high in pan, sear 2 pieces of beef, put in slow cooker. Wipe out loose black bits, repeat with remaining beef. Deglaze pan with beer (reduce to 1/4 cup), add to slow cooker.
2. Arrange beef so it’s all submerged as best as possible (some sticking out ok). Slow cook 10 hours on low.
3. Remove beef, shred. Reduce sauce in pot or large saucepan over medium high 15 – 20 min until honey consistency*. Stir regularly so base doesn’t catch, lower heat when it starts sputtering as it thickens. Toss half sauce with the beef, pour the rest in a jar and serve on the side of the beef.
4. SERVING - Use for sliders with Coleslaw or make big Southern dinner plates with a side of Mac and Cheese, warm buttery cornbread, and a lovely fresh corn and tomato salad with avocado!
 
* BBQ Sauce will thicken more as it cools, so don’t make it too thick.
