How to Bake FINNISH SHROVETIDE BUNS ”Laskiaispullat” – Shrove Tuesday

Hello! I am happy to share with you how to make Finnish Shrovetide Buns, in Finnish we call them "Laskiaispullat". 😋 We have a tradition in Finland that on Shrove Tuesday we are sledding down a hill and eating Shrove buns!

BUN DOUGH (about 15 buns)
2 ½ dl milk
25 g yeast
1 egg
¾ teaspoon of salt
1 dl sugar
2 teaspoons cardamom
7-8 dl wheat flour
100 g margarine or butter

BUN FILLING
Cream
Jam or almond paste

1. Heat the milk to 37 Celsius degrees.
2. Stir the fresh yeast into the milk.
3. Then mix in the egg, sugar, cardamom and salt.
4. Then add the wheat flour gradually.
5. Add soft butter and flour as needed.
6. Knead the dough by hand until it no longer sticks to the edges of the bowl.
7. Cover the bowl with a kitchen towel and let the dough rise for about 30 min.
8. Knead the dough, make a bar of it and cut it into same-sized pieces.
9. Make buns by rolling the pieces and but them on an oven sheet.
10. Let the buns rise under a kitchen towel for 10-15 min.
11. Brush the buns with egg and sprinkle nib sugar.
12. Bake at 225 Celsius degrees 10-15 min.
13. Whip the cream.
15. When the buns have cooled, cut a bun in half and spread jam and cream on the bottom piece, and put the top piece on.
