Pineapple Sheera (Pineapple Semolina Dessert)

Serves - 2

Ingredients:
Pineapple puree - 1 cup
Pineapple chunks - 1/3rd cup
Semolina (Suji) - 1/2 cup
Sugar - 1/2 cup (If your pineapple is sour then you can increase the sugar quantity)
Green Cardamom powder - (1/4th pinch)
Chopped Dry fruits (Cashew, Raisins, Almonds) - 1 tbsp each
Water 1 cup
Procedure:
Take a pan, pour pineapple puree to it. Then add sugar and a little water and bring it to a boil. Then add the pineapple chunks and simmer it for 6-8 min. Keep it aside. In other pan, take half of the ghee and roast dry fruits till a golden brown color. Then take out the dry fruits and in the same pan add rest of the ghee. Now roast the semolina on medium flame till it becomes golden brown. During roasting continuously stir. As it becomes golden brown add pineapple sauce to it with half cup of water and let it cook on a low flame. After 2-3 min the pineapple sheera is ready. Garnish it with pineapple chunks and dry fruits. Serve hot and enjoy.
