Beef Enchiladas with the Best Homemade Spicy Red Sauce

Cheesy ground beef enchiladas are full of flavor with a quick and easy homemade red enchilada sauce!

Ingredients for the sauce
6-7 Chiles Guajillos
4-5 Chiles de Arbol
1-2 Garlic Cloves
1/2 Tsp Cumin
1/2 Tsp Oregano
1-2 Tbsp of Chicken Bouillon
1 Tbsp Corn Starch
2 Cups of Water

For the Filling
1-2 Lbs Ground Beef
2-3 Jalapenos
1/2 Red Bell Pepper
2 Garlic Cloves
1 Small Onion
1 Tbsp Guajillo Chili Powder
Salt & Pepper to your liking

Toppings
Your favorite melting cheese ( I used Monterrey Jack)
Chopped Cilantro
Queso Fresco (optional)
