Smashed Potatoes & Sausage Spring Bake

The secret isn’t more seasoning; it’s structure. By boiling then smashing the potatoes for maximum surface area, using rendered sausage fat as a seasoning tool, and adding a sharp rhubarb salsa to cut through the richness, we create a meal that is balanced, vibrant, and incredibly satisfying.

🥔 650g White potatoes
🍠 450g Sweet potatoes
🌭 300g Fresh sausage (casings removed)
🫑 1 Bell pepper
🧅 2 Onions (wedges)

🌱 1 tsp Fennel seeds

🥒 1 Cucumber
🌱 2 Spring onions
🌶️ Fresh chili (to taste)
🍋 1 tsp Lemon juice
🥄 1 tsp Sugar (to balance)
🌽 100g Corn

The Wild Garlic Sauce (The Foundation)
🥛 200g sour cream
🍃 1 handful Wild garlic (or chives)
🫒 1 tbsp Olive oil
