So tender and delicious beef shank slowly cooked to perfection.
Ingredients:
1 kg or 2.2 lbs of beef shank
Flour enough to coat the beef shanks
4 tbsps avocado oil (3 tbsp for frying the
shanks and add 1 tbsp for sautéing)
6 cloves of garlic, sliced
1 yellow onion, sliced small
1 tomato, diced
1 carrot, diced
1/2 cup dry white wine
1 tbsp worcestershire sauce
1 cup water
1 tbsp soy sauce
1/2 tbsp salt
1/2 cup tomato sauce (not on the video but
added after an hour)
1/2 tsp ground black pepper
1/2 tsp dried oregano
***Serve over pasta, rice or mashed potatoes and topped with any hard cheese of your choice as garnish.
Heat 3 tbsps of avocado oil in a saucepan.
Lightly coat the beef shank with flour and fry for 2 minutes on each side or until brown on medium heat. When done, transfer to a plate and set aside.
On the same saucepan, add 1 tbsp of avocado oil and start sauteing garlic, onion, tomato and the carrots for about 2 minutes.
Add the wine to deglaze the pan and worcestershire sauce. Stir and let simmer for a minutes then put back the beef shanks. Pour in the water and soy sauce. Stir a bit then cover and let simmer for 1 hour on medium-low heat.
Check after an hour, try to move the meat. Add tomato sauce and salt to taste, stir well. Cover and simmer for another 1 hour on medium-low heat. Check occasionally.
After the second hour, check for tenderness and flip the meat. Add black pepper and dried oregano, stir the sauce well. Put the lid back on if not tender enough but check every 20-30 minutes since the sauce gets thicker and meat could easily stick to the pan. Adjust the liquid if needed until tender.
