It's opening day of the 2021 Florida Spiny Lobster season. Our season runs from Aug 6th-March 31st. We free dive Fort Lauderdale for Caribbean Spiny Lobster just off the beach, in around 10-25ft of water. We use a tickle stick to push them out of the structure they're hiding in, whether it be a rock, coral head or ledge. We then net them using our custom lobster nets! I saved all the lobster bodies this trip to make a delicious lobster stock. Then I used the lobster stock to make a fennel lobster risotto, with corn puree, herb oil and seared sea scallops!
