Chicken Sotanghon Soup

Chicken Sotanghon is a Filipino soup made from long thin cellophane or glass noodles or mung-bean starch. Sotanghon noodles have also been called bean-thread noodles or vermicelli. A flavorful soup perfect during rainy season and cold weather.

Ingredients:
1/2 - 3/4 lb chicken breast
8 cups water
1 tsp salt
1 cup annatto extract (1/3 cup annatto seeds + hot 1 cup chicken broth from reserved soup) - adjust the annatto as needed
6 -8 cloves garlic (for toasting)
4 cloves garlic, minced
1 small onion, chopped
2 bundles (4 oz) vermicelli / sotanghon noodles
1/2 cup carrots, julienne
1 cup cabbage, shredded
1 piece chicken cube
1/3 cup green onion or scallions, chopped
1 tbsp fish sauce (adjust to desired amount)
ground pepper to taste
