The UGLY Side of the Homestead
We don't often show the back side of our homestead. Here's why.

Our basic chicken casserole (keep in mind I don't really measure anything):
2 cups dried pasta (works best with heavy kinds)
2 cups (or however much you have) cooked chicken meat
2 cups milk
2 cups chicken broth
3 Tbsp butter
3 Tbsp flour
salt, pepper, and other spices that go well with chicken (thyme, parsley, sage, etc...)
--cook and drain pasta
--chop chicken into small pieces
--combine chicken broth and milk and bring to near room temperature (I do this in a mason jar)
--combine flour and spices so they're handy
--melt butter in a skillet or right in your dutch oven
--add flour and spices to melted butter, whisk into a roux
--add chicken broth and milk mixture, keep whisking until mixed --keep whisking occasionally 5-10 minutes or until slightly thickened into a thick sauce or thin gravy
--combine ingredients in a baking dish of any shape, or right in your dutch oven
--bake 20-30 minutes or until thick and bubbly, cool slightly before serving
ou can use this base recipe to make anything yummy. Mix in canned corn or green beans that your kids don't want to eat. Use rice instead of pasta. Make it without meat or with very little meat because you're out. Put bread crumbs on the top. Put bread crumbs and grated cheese on the top! Put bread crumbs and grated cheese and more butter on the top!! :) Sky's the limit. Enjoy!
