Cherry Yum Yum

Ingredients:

Crust:
• 2 ½ cups (288g) graham cracker crumbs
• ¾ cup/12 Tbs (170g) unsalted butter, melted

Cherry Filling:
• 2 21oz (1190g) can Comstock More Fruit Pie Filling

Cream Cheese Mixture:
• 2 (8 oz.) (454g) packages cream cheese, softened
• 1 cup (120g) confectioners’ sugar
• 4 cups (946ml) whipping cream
• 2 tsp (10g) vanilla extract, divided
• 6 Tbs (75g) granulated sugar

Instructions

1. In a bowl, combine graham cracker crumbs and melted butter. Blend with a fork until crumbs are moistened. Set aside 3 tablespoons (23g) of crumbs to sprinkle on the top.
2. Press crumb mixture into the bottom of a 9x13-inch pan that’s been sprayed with non-stick cooking spray.
3. With an electric mixer, cream together softened cream cheese, confectioners’ sugar, and 1 teaspoon (5g) vanilla extract until smooth.
4. In a separate bowl, whip the whipping cream, granulated sugar, and remaining 1 teaspoon (5g) vanilla extract until stiff peaks form.
5. By hand, mix together whipped cream and cream cheese mixture until well combined.
6. Spread a little less than half the cream cheese/whipped cream mixture evenly over the crust.
7. Gently spoon and spread pie filling evenly over the cream cheese layer.
8. Top with the remaining cream cheese/whipped cream mixture. Gently spread it evenly over the filling layer, covering it completely.
9. Sprinkle the top with the 3 tablespoons (23g) reserved graham cracker crumbs. Cover and refrigerate for several hours or overnight before serving.
