How to Make a Tender BEEF ROAST - With Carrots and Potatoes - Steph’s Stove
Beef Roast with carrots and potatoes brings back memories of Sunday dinner with the family. Using a Crock Pot to cook slow and low allows all of the wonderful beef flavors to permeate throughout the roast creating a tender, juicy, melt in your mouth beef roast that your family will love.
Beef Roast
3-5 pound beef chuck roast
1 lb. Baby Carrots
7-8 Red Potatoes (cut in ¼)
1 package Brown Gravy Mix
2 cups Water (warm)
Salt / Pepper
Slurry: 2 tablespoons water + 1 tablespoon Cornstarch
Add beef roast to the Crock Pot and liberally salt and pepper roast. Add brown gravy mix to 2 cups warm water, mix to incorporate, and pour over roast. Place lid on Crock Pot and turn to HIGH for 2-hours, then shift to LOW for 6-7 hours.
1 Hour prior to serving, add potatoes and carrots to a microwave safe dish with enough water to cover. Cook for 15-20 minutes until fork tender. Drain water and add vegetables to roast. Allow vegetables to remain in roast for 1-hour before serving. Add slurry mixture (recipe above) to thicken gravy. Slurry should thicken within 1-2 minutes. Serve over fluffy white rice. Add additional salt/pepper to taste after serving. Enjoy!
