Stop Motion Gingerbread ✼ Mézeskalács ✼ Hungarian Cookies for Christmas
Are you ready for some Christmas gingerbread cookies? I make them based on a Traditional Hungarian Mézeskalálcs ("honey cake") recipe. Come join me as the spices start dancing on my bake-board and the cookies magically ice themselves! What? They don't do that in your kitchen?
It has actually been a long time dream of mine to shoot a stop-motion style video, and I'm so glad I finally did.

✼ Recipe, Ingredients and Instructions ✼
✽ Ingredients:
✽ For the Gingerbread:
250 g flour
1 package of baking powder (12 g)
1/2 tsp baking soda
1 tsp fresh ginger
1 tsp ground cinnamon
1 tsp ground nutmeg
1 tsp ground allspice
1 tsp ground cloves
1 egg
a pinch of salt
50 g butter
60 g brown sugar
125 g honey
✽ For the Royal Icing
(about) 1+1/2 cups of confectioner's sugar
1 egg (white)
✽ Instructions:
Preheat oven to 180°C.
In a large bowl whisk together the flour, baking powder, baking soda, and all the spices (ginger, cinnamon, nutmeg, allspice, cloves). Add the egg and a pinch of salt and mix thoroughly.
In a pot, melt the butter, then add the sugar and the honey. Heat and stir until homogenous.
Add the honey mixture to the large bowl and mix with a wooden spoon.
Careful! The honey is very HOT!
Cover the bowl and let sit overnight, or for 5-12 hours.

Sprinkle flour on your workspace and work the dough with your hands – the heat from your hands will make it more malleable. Roll out the dough to a 3 mm thickness (any thinner and the cookies are likely to break).
Cut your cookies! Traditional shapes, or not, they will all be delicious!
Lay your cookies into a pan lined with baking paper.
Make sure you keep 1-2 cm distance between the cookies, as they will expand.
Bake at 180° for 6 minutes. Use a timer! as the cookies get burnt very easily.
Wait for the pan (and cookies) to cool down before removing them. They are soft, squishy and fragile while they're hot.

Time for icing: in a large bowl beat the egg-white until hard, then add the sugar gradually, until the texture of the icing is to your liking.
With a spatula, scrape the icing into a sturdy plastic bag. Cut a SMALL hole on one corner.
Ice away!
You can add sugar pearls, half walnuts, almonds, etc. for decoration.
