fried rice fritters | RECIPE?! ep #10 (hot for food)

Here's how to use up left over rice in an elevated way. Rather than whipping up a typical fried rice dish, we use Indian spices and sauté veggies with rice, combine that with mashed sweet potato and batter balls of the mixture with chickpea flour to make something sort of like a pakora! To top if off we whip up a coconut mango mint dipping sauce!

FRIED RICE INGREDIENTS:
coconut oil
white onion, chopped
ginger, finely chopped
whole cumin seeds
whole mustard seeds
chili flakes
nutmeg
garam masala
ground cloves
turmeric
sea salt
ground pepper
garlic, minced
red pepper, chopped
vegetable stock
left over basmati rice

FRITTER INGREDIENTS:
green onion, chopped
cilantro, finely chopped
mashed sweet potato

FRITTER BATTER INGREDIENTS:
chickpea flour
paprika
onion powder
sea salt
baking powder
almond milk
soda water

COCONUT MANGO DIP INGREDIENTS:
unsweetened coconut yogurt
lime juice
lime zest
mango jam
sea salt
fresh mint, finely chopped
