MORCON (with English subtitles)

MORCON (also called BINUO in my family) is not an everyday fare among Filipinos, most often it is served on special occasions like fiestas, weddings or during Christmas.

INGREDIENTS:

FOR THE BEEF:
1 1/2 kilos beef, (should be one whole thinly sliced sheet of beef, a few thinly sliced beef will do like the one I used here)
1/2 cup soy sauce
1 teaspoon maggi savor or knorr liquid seasoning
2 tablespoons kalamansi juice
1 1/2 tablespoons brown sugar
ground black pepper

FOR THE FILLING:
2 strips pork fat
1 to 2 pcs chorizo de bilbao (or chinese chorizo, vienna sausage or hotdog)
2 to 3 pcs of hard-boiled eggs, quartered
1 small carrot, sliced into long strips
2 to 3 pieces whole sweet pickles, halved or quartered
2 strips of cheese

FOR THE SAUCE:
marinade used for the beef
11/2 tablespoons finely minced garlic
1/3 cup minced onions
2 pieces bay leaf
2 cups tomato sauce (you may add more if you want more sauce)
patis or salt and pepper to taste
1 to 2 pieces knorr chicken cubes
olive oil (canola or vegetable oil will also do)

OPTIONAL:
sugar if the sauce is too sour for your taste
grated cheese if you want the sauce to be a little creamy
