This video shows off various maneuvers you can use to get an enemy off your tail. It's not a definitive list but includes most of the ones I use.

Some I didn't include: Air brakes on jets, turning down the throttle and putting landing flaps down to force a plane to overshoot, forcing your enemy to black out, etc.
