Corn Casserole/Pudding Side Dish

This dessert/side dish is so good, so moist and pairs perfectly as an accompaniment to your thanksgiving dinner, or for a Sunday brunch, and it’s so darn easy to make

What you’ll need:

2 medium eggs
1 can each of sweet corn (not drained)
and creamed style corn
8 oz of sour cream
1 stick of butter melted (I used salted)
1-2 tablespoons of sugar (optional)

Steps:

In a large deep bowl add the eggs and whisk a bit, add the cans of corn and stir together,
add the box of Jiffy Corn Muffin Mix the sugar, and stir till it’s all incorporated nicely and smoothly

Pre heat oven at 350 (I have gas oven)

In an oven safe pan (I used an 8x8 approx size glass baking pan)

add the melted butter, let it go up the sides as well, then add the mixture, I then added in the sour cream and stirred it all gently till the butter is pretty much absorbed by the mixture

Put your pan on a baking dish in middle rack and bake for 1 hour

Take out, put on cooling rack and dig in once it’s not too hot, but still warm
