Beets & Dandelion Tops: Greens That Sustained the Enslaved | Soul Food Origins

Before collard greens dominated the table… before kale became trendy… beets and dandelion tops were survival.

In this episode of Soul Food Stories, we uncover the powerful history behind beets and dandelion greens in the diets of enslaved Black Americans. Plantation rations were limited, often little more than cornmeal and scraps. But enslaved communities found nourishment in the land itself — foraging, cultivating, and cooking wild and hardy greens to sustain themselves.

Beets provided both roots and leaves, rich in vitamins and calories, while dandelion tops thrived in Southern soils, offering bitter, nutritious greens that could be boiled, seasoned, or mixed with other vegetables.
