Tallow Fries. Full recipe in the description! #glutenfree #frenchfries #dairyfree

Ingredients:
3 russet potatoes, peeled and cut into ¼–½ inch matchsticks
24 oz beef tallow (or enough to submerge fries in your pot)
Salt, to taste

Instructions:
1. Peel and cut russet potatoes into ¼–½ inch matchsticks.
2. Immediately transfer cut potatoes to a bowl of ice water.
3. Soak for at least 10 minutes to remove excess starch (longer = crispier fries).
4. Drain and pat completely dry with a clean kitchen towel — moisture will cause oil to splatter.
5. In a Dutch oven or deep skillet, add beef tallow and heat to 400°F over medium-high heat. No thermometer? Test by dropping a small piece of potato into the oil — it should bubble rapidly.
6. Carefully add half of the fries and fry for 5 minutes. They should soften but not fully brown.
7. Remove with a slotted spoon and place on a cooling rack or paper towels.
8. Repeat with the second batch.
9. Let fries rest and oil return to temperature.
10. Return all fries to the hot oil.
11. Fry for an additional 5 minutes, or until golden brown and crispy.
12. Remove and drain on rack or paper towels.
13. Immediately season with salt while still hot. Serve plain, with ketchup, or your favorite dipping sauce.
