Meal Prep Monday : Quick & Easy Thai Noodles

Today is kicking off a new series. Meal Prep Mondays. Where I share with you a simple recipe that can be prepped in advance and enjoyed for days! First up, Thai noodles! I took a few short-cuts this week--and I encourage you to always do the same when it makes sense.

Here is how I prepped the Thai Noodles in this video (heavy on veggies this week!!)

Thai Noodles
1 teaspoon sesame oil
2 tablespoons low sodium soy sauce
1 pinch crushed red pepper flakes optional
1 tablespoon rice vinegar
1/2 teaspoon Sriracha
2 tablespoons creamy peanut butter
1 tablespoon honey
juice of a fresh lime
1 clove minced garlic
8 ounces noodles (cooked per package directions)
1 package broccoli slaw
1 cup of shelled, thawed edamame
1 red bell pepper sliced
green onions
For Serving: chopped peanuts, cilantro, and/or Sriracha
